# How-To Steps:

- Cook egg noodles according to package directions. Drain thoroughly, rinse under cold water to stop cooking, and set aside.
- Whisk together sweet chili sauce, soy sauce, rice vinegar, sesame oil, and cornstarch in a small bowl until cornstarch dissolves completely.
- Heat a large wok or deep skillet over medium-high heat with a splash of oil. Add turkey slices and stir fry for 3-4 minutes until just cooked through. Remove turkey and set aside.
- Add more oil to the wok if needed. Stir fry garlic, ginger, and red onion for 1 minute until fragrant and onions begin to soften.
- Add bell peppers, carrots, and sugar snap peas to the wok. Stir fry for 3-4 minutes until vegetables are crisp-tender.
- Return cooked turkey to the wok. Add noodles and sauce mixture. Toss everything together and stir fry for 2-3 minutes until well coated and heated through.
- Stir in spring onions and red pepper flakes. Serve immediately topped with toasted sesame seeds and fresh coriander.
